Haskap Buckle Recipe

This is a twist to the charmingly old-fashioned dessert you love to partner with coffee or tea. Enjoy a delicious cake packed with nutritious haskap berries and topped with a sweet buttery streusel topping.

Bake: 45 mins

Ingredients:

For Crumble Topping

1/2 cup All-purpose Flour
1/3 cup Granulated Sugar
4 tbsp Melted Butter
1 tsp Ground Cinnamon
Pinch Kosher Salt

For Cake

2 cups All-purpose Flour
2 tsp Baking Powder
1/2 tsp Butter, softened to room temp
1/2 cup Granulated Sugar
1/4 cup Brown Sugar
1 large Egg
2 tsp Vanilla Extract
1 cup Buttermilk
2 cups Haskap Berries

Directions:

  1. Preheat oven to 375°, grease an 8" baking pan with nonstick cooking spray, and line it with parchment paper.
  2. Make the crumble: In a medium bowl, stir to combine all crumble ingredients until no dry spots remain.
  3. Make the cake: In a large bowl, whisk together flour, baking powder, and salt. In a medium bowl, beat to combine butter, sugars, egg, and vanilla. Add buttermilk and dry ingredients alternately. Gently fold in haskap berries until just combined and transfer to the prepared baking pan.
  4. Add the crumble mix to the top of the batter in an even layer. Bake for about 45 minutes or until the toothpick comes out clean when poked.
  5. Let cool for at least 15 minutes before slicing and serving. Enjoy!
